Crispy Instant noodles

Crispy instant noodles during lockdown anyone? 😃

Aunt's recipe: Yummy. Crispy. Crunchy. A 5 min perfect rainy day snack! 
Ingredients:
Instant noodles w seasoning
Eggs
White oil

Steps:
Cook the instant noodles (with half of the seasoning). Overcooking will spoil it so please avoid making it very soft. Set it aside. 
Scramble eggs and set it aside.
Drizzle some oil in a wok. (Non-stick works best)
When the oil is heated, put in the noodles and stir fry it. Add the rest of the seasoning. When it becomes crunchy, add the eggs and mix it. 
Serve it warm. 😃


Fruit punch fiber-protein filled gluten-free lactose-free vanilla banana-oatmeal pancake!

Fruit punch fiber-protein filled gluten-free lactose-free vanilla banana-oatmeal pancake! 🥞🍽️ 

Ingredients:
Oatmeal flour, ground flax seeds, ground chia seeds, honey/brown sugar, bananas, eggs, butter, baking powder, vanilla essence, pinch of salt, maple syrup (optional), dry cranberries to garnish. 

Steps:
Blend the oatmeal, bananas, ground seeds, eggs, baking powder, sweeteners, salt, vanilla essence together. I added about 2 tsps of melted butter to it. Then in a big nonstick pan I put small amounts of batter and let it cook on medium-low heat. Flip the pancakes when bubbles appear. Let the other side cook. 
Serve with a small amount of butter and drizzle honey or maple syrup on top. Garnish with dried cranberries for that fruity punch! 😍


Mango Tapioca pearls dessert


Mango Tapioca pearls dessert 🍧

An exclusively delicious mango dessert!
Tapioca pearls (sago) is widely available in India and many countries of South East Asia. A gluten free, light and healthy food that is made from tapioca roots, it can be widely used for making different desserts and in different drinks! 🍹
I made this sweet small cup of dessert with a sliced mango, a little bit of chilled milk (coconut milk works best) and some sugar. I cooked the tapioca pearls in water on medium flame until the pearls were transparent and cooked. I drained the extra water and let it cool.

On the other hand I blended the chilled milk, a few mango slices and sugar. Then I layered a glass with the mango blend, cooked tapioca pearls and topped it with a few sliced mangoes. Then I placed it in the refrigerator for a while. Voila! It's ready!

Grandma's Tangy minced chicken

Spice up your winter day with some chicken with a dash of tangy flavour!
Ingredients:
Minced chicken 🍗
Tomatoes 🍅
Onions
Green/Red chillies 🌶️
Salt
Olive oil
The ingredients should all be of equal measure (except chillies, oil & salt)
Instructions:
Put all the ingredients together in a covered pot. Stir from time to time on medium heat and cook until the meat is done. Turn on high to dry the gravy. And it's done!
Serve warm over rice or quinoa and enjoy!

Quinoa egg salad with Mexican seasoning

Ingredients:
Tomatoes 🍅
Onions
Garlic
Eggs 🥚
Cilantro 🌿
Quinoa
Mexican seasoning
Olive oil


Instructions:
Stir-fry the veggies and fry in the eggs and add cooked quinoa. Add Mexican seasoning and salt as necessary. Stir-fry till done and serve!

Grandma's Recipe: Traditional Dahi Paneer/Tofu!

Dahi Paneer Recipe:
Ingredients:
500 g paneer/tofu
400 g unsweetened yoghurt
1 tbsp ginger paste
1 tsp red chilli powder/paste
1½ tbsp corriander seed powder/paste
1 bay leaf
1 stick cinnamon
2-3 cardamoms
Handful of Raisins
Ghee
White oil
Sugar
Salt
Process-
Step 1. Cut the paneer into small cubes
Step 2. In a bowl take unsweetened yoghurt/curd, small amount of red chilli paste/powder, ginger paste, corriander paste/powder and whip up until smooth.
Step 3. Put some ghee/white oil in the kadhai and lightly deep fry the paneer till golden.
Step 4. Set out aside the fried paneer
Step 5. Put in bay leaf, dry red chilly, cinnamon and cardamom in oil and let it smoke up.
Step 6. Stir in the yoghurt mixture and saute.
Step 7. Put in the raisins and fried paneer and mix well on medium heat.
Step 8. Put salt and sugar as desired.
Step 9. Mix until the oil separates from the curd. Then put 2tsps ghee and stir well.
Step 10. Your paneer is ready! Enjoy with rice or roti or bread!

Overnight Banana Vanilla Oats Muffin


Ingredients:

  • 1/2 cup oats (rolled or quick)
  • 1 cup yogurt
  • 1 cup whole/skimmed milk
  • 3 tsps sugar
  • 1-2 bananas
  • 1-2 drops vanilla essence
I am a believer of using real sugar in limited quantities instead of substitutes that causes side effects.
I also prefer to use whole milk and plain yogurt instead of flavored. Better to keep the ingredients simply pure as they are, without the additional of anything.


Directions:

  1. Place the oats in a bowl. (Do not use any metal bowl)
  2. Whip the yogurt lightly to make it runny and smooth and pour it over the oats.
  3. Pour milk over the mix and lightly mix till the oats are soaked.
  4. Put sugar and vanilla essence and mix well.
  5. Top it with sliced bananas. 
  6. Cover with a tight non metal lid and place in the refrigerator.
Your yummy breakfast muffin is ready!!

It stays a couple of days so you can make as much you want!

The above given amounts serve me 2 breakfasts for myself.
