Gut friendly - antacid - oatmeal applesauce pancakes! ~


Hello people! I'm back with a new recipe!  This one is experimented on myself while I was struggling with severe conditions of GERD (gastro esophageal reflux disease). I had shivering, weakness, dyspepsia, and a really bad stomach condition! But changes in my diet really helped me recover! Enjoy this gluten free lactose free delicious pancakes! So I am sharing this recipe with you for all you who needs the same like me! 😃✌🏼

Ingredients: 

• Applesauce (boiled and mashed apples) 1 cup
• Oatmeal flour 1 cup
• Brown sugar 1/4 cup (depending on taste)
• Baking powder (½ tsp)
• Cinnamon powder (1 tsp)
• Vanilla essense (½ tsp)
• Salt qs

Steps:

Mix the ingredients well until blended. A little water can be added to make the batter to the proper consistency.

Smear ¼ tsp white/olive oil on a non stick pan. Pour out the pancake batter and cook on low heat. This recipe takes a little longer and the pancakes are much softer than other recipes as it doesn't really have a binding ingredient. So please make sure the base is cooked and looks golden before flipping it. Let the other side cook. Serve fresh with sliced apples! 🥞

Crispy Milky French Omelette!


Ingredients:
• Eggs 2 pcs
• Butter 1½ tbsp
• Milk 2 tbsp
• Salt ¼ TSP
• Cold water 1 tbsp

Steps:

Mix well all the ingredients except butter. Put 1 tbsp butter in a nonstick pan and heat it. Pour in the omelette mix. Let it cook on med - low heat. Once cooked gently fold it and slip ½ tbsp butter under it. It will make the omelette crisp. Slide onto a plate and dig in! 😃

Protein punch - chocolate - oatmeal pancakes!! 🥞

Ingredients:
 
• Oatmeal (ground) 2 cups
• Chocolate protein powder ½ cup
• Brown sugar ⅓ cup
• Bananas 2
• Eggs 2
• Flax seed 2 tbsp
• Soy/Almond Milk ⅓ cup
• Baking powder ⅕¼ TSP
• Salt ¼ TSP
• Vanilla essence ½ TSP
• Coconut oil 1 tbsp

Steps:

Blend all the ingredients together and cook on a non stick flat pan on low heat. Flip gently when bubbles appear on one side. 
Serve with a topping of peanut butter and honey/ maple syrup!! 😃

Crispy chilli baby corn 🌽🌶️ with noodles 🍝

Ingredients:

• Baby corn 🌽
• Capsicum
• Onions
• Spring onions
• Soyasauce
• Cornflour
• Eggs
• Green chillies
• Ajina (opt.)
• Salt
• Sugar

For noodles:

• Noodles
• Onions
• Cabbage
• Eggs

Steps:

• Blanch the baby corn to soften. Then dice it after cooling. Chop the vegetables and keep aside. In a bowl whisk the egg and keep. Dip the diced baby corn pieces in egg and coat it with the cornflour. Deep fry until light golden. Keep aside. In a wok fry the chopped vegetables until cooked. Add soyasauce, salt and sugar as per taste. Add ajina to taste (optional). Add in the fried onions and toss until mixed well. Add some cornflour mixed with water for gravy (amount as per your preference). I made this dry.

• Cook the noodles and let it drain. Fry the vegetables and toss in the noodles for sometime.
Pour out and serve with scrambled eggs topping on with the chilly baby corn!!

Classic Gourmet Mocha (homemade)

Classic gourmet mocha (homemade) ☕

Ingredients:

•Milk 1 cup
•coffee powder 1½ TSP
•cocoa powder 2 TSP
•cinnamon powder ¼ TSP
•sugar 3 TSP 

Steps:

Warm the milk until it comes to boil. Mix the dry ingredients in a beaker. (Adjust the amount of sugar as per taste. I like it sweet so I put more sugar). Pour the hot milk and stir well. Pour in coffee cups and serve with cookies. 
The cinnamon adds a gourmet taste to the mocha making it ultra special!

Crispy Instant noodles

Crispy instant noodles during lockdown anyone? 😃

Aunt's recipe: Yummy. Crispy. Crunchy. A 5 min perfect rainy day snack! 
Ingredients:
Instant noodles w seasoning
Eggs
White oil

Steps:
Cook the instant noodles (with half of the seasoning). Overcooking will spoil it so please avoid making it very soft. Set it aside. 
Scramble eggs and set it aside.
Drizzle some oil in a wok. (Non-stick works best)
When the oil is heated, put in the noodles and stir fry it. Add the rest of the seasoning. When it becomes crunchy, add the eggs and mix it. 
Serve it warm. 😃


Fruit punch fiber-protein filled gluten-free lactose-free vanilla banana-oatmeal pancake!

Fruit punch fiber-protein filled gluten-free lactose-free vanilla banana-oatmeal pancake! 🥞🍽️ 

Ingredients:
Oatmeal flour, ground flax seeds, ground chia seeds, honey/brown sugar, bananas, eggs, butter, baking powder, vanilla essence, pinch of salt, maple syrup (optional), dry cranberries to garnish. 

Steps:
Blend the oatmeal, bananas, ground seeds, eggs, baking powder, sweeteners, salt, vanilla essence together. I added about 2 tsps of melted butter to it. Then in a big nonstick pan I put small amounts of batter and let it cook on medium-low heat. Flip the pancakes when bubbles appear. Let the other side cook. 
Serve with a small amount of butter and drizzle honey or maple syrup on top. Garnish with dried cranberries for that fruity punch! 😍


Mango Tapioca pearls dessert


Mango Tapioca pearls dessert 🍧

An exclusively delicious mango dessert!
Tapioca pearls (sago) is widely available in India and many countries of South East Asia. A gluten free, light and healthy food that is made from tapioca roots, it can be widely used for making different desserts and in different drinks! 🍹
I made this sweet small cup of dessert with a sliced mango, a little bit of chilled milk (coconut milk works best) and some sugar. I cooked the tapioca pearls in water on medium flame until the pearls were transparent and cooked. I drained the extra water and let it cool.

On the other hand I blended the chilled milk, a few mango slices and sugar. Then I layered a glass with the mango blend, cooked tapioca pearls and topped it with a few sliced mangoes. Then I placed it in the refrigerator for a while. Voila! It's ready!
