Crispy Instant noodles

Crispy instant noodles during lockdown anyone? 😃

Aunt's recipe: Yummy. Crispy. Crunchy. A 5 min perfect rainy day snack! 
Ingredients:
Instant noodles w seasoning
Eggs
White oil

Steps:
Cook the instant noodles (with half of the seasoning). Overcooking will spoil it so please avoid making it very soft. Set it aside. 
Scramble eggs and set it aside.
Drizzle some oil in a wok. (Non-stick works best)
When the oil is heated, put in the noodles and stir fry it. Add the rest of the seasoning. When it becomes crunchy, add the eggs and mix it. 
Serve it warm. 😃


Fruit punch fiber-protein filled gluten-free lactose-free vanilla banana-oatmeal pancake!

Fruit punch fiber-protein filled gluten-free lactose-free vanilla banana-oatmeal pancake! 🥞🍽️ 

Ingredients:
Oatmeal flour, ground flax seeds, ground chia seeds, honey/brown sugar, bananas, eggs, butter, baking powder, vanilla essence, pinch of salt, maple syrup (optional), dry cranberries to garnish. 

Steps:
Blend the oatmeal, bananas, ground seeds, eggs, baking powder, sweeteners, salt, vanilla essence together. I added about 2 tsps of melted butter to it. Then in a big nonstick pan I put small amounts of batter and let it cook on medium-low heat. Flip the pancakes when bubbles appear. Let the other side cook. 
Serve with a small amount of butter and drizzle honey or maple syrup on top. Garnish with dried cranberries for that fruity punch! 😍


Mango Tapioca pearls dessert


Mango Tapioca pearls dessert 🍧

An exclusively delicious mango dessert!
Tapioca pearls (sago) is widely available in India and many countries of South East Asia. A gluten free, light and healthy food that is made from tapioca roots, it can be widely used for making different desserts and in different drinks! 🍹
I made this sweet small cup of dessert with a sliced mango, a little bit of chilled milk (coconut milk works best) and some sugar. I cooked the tapioca pearls in water on medium flame until the pearls were transparent and cooked. I drained the extra water and let it cool.

On the other hand I blended the chilled milk, a few mango slices and sugar. Then I layered a glass with the mango blend, cooked tapioca pearls and topped it with a few sliced mangoes. Then I placed it in the refrigerator for a while. Voila! It's ready!
